This year marks Wiltons' 275th anniversary, established in 1742 by George William Wilton, as a fishmongers close to London's Haymarket.

His venture was continued by his family who turned the business into a fully fledged restaurant in 1840. Since then Wiltons has established an international reputation that reflects the epitome of fine British dining in London and is known for serving perfectly prepared wild fish, shellfish and game when in season, sourcing produce from the finest farms.

Wiltons is perhaps the only restaurant that is recognised for acquiring six royal warrants for providing seafood to members of the royal households between 1838 and 1938.
